Chipotle BBQ Ribs

A Chipotle infused smokey, spicy take on BBQ ribs from Doris Metropolitan in Houston, TX

The recipe, created by Executive Chef Oren Ben Lulu of the acclaimed Houston restaurant, is filled with the bold flavors of Chipotle pepper and ground espresso, and is meant to pair perfectly with Angels & Cowboys Proprietary Red wine blend.

Ingredients

  • 2 racks of baby back ribs
  • 1 medium onion
  • 5 cloves of garlic
  • 1/2 cup mustard
  • 2/3 cup ketchup
  • 1/3 cup soy sauce
  • 2 tbsp honey
  • 1 - 2 Chipotle peppers
  • 2 tbsp ground espresso

Directions

Preheat oven to 350 degrees F

Slice garlic and onion. Sauté onion until translucent, about 3 minutes, add the sliced garlic and cook for 2 more minutes.

Place all the ingredients with the sautéed onion-garlic in a blender or food processor and blend to make a thick sauce.

Using about ¾ of the sauce, coat pork ribs, rubbing all around to cover all parts of the pork and wrap with foil. Place on a baking sheet with a little bit of water.

Bake at 350 degrees F for 4 hours.

Remove from the oven, take off the foil and pour the sauce over the ribs, setting oven temp to 450 degrees F.

Place the ribs back on the baking sheet and cook at 450 degrees F for another 5 minutes to get a nice caramelized color.

Remove from oven and serve!
