2018 Cannonball Chardonnay

WINEMAKER NOTES

The 2018 season saw a substantially delayed start (as compared to 2017)  warm and mild weather through the late spring and into summer turned the season into a dream. Winter and spring rains ensured that sufficient water was available where needed and the vintage was notable for its consistency in weather and temperatures which created steady ripening, gradual flavor development, and phenolic maturity at lower-than-average sugar levels. Fruit easily reached desirable maturity even while carrying the above-average-sized crop that was observed nearly state-wide and across all varieties. Chardonnay grapes enjoyed the balmy late summer days and the temperate weather enhanced the development of pome and white-flesh fruit characters.

In order to preserve the elegant fruit character we employed French oak  to enhance the natural caramel, toffee, and toasted bread notes in the wood.   Nine months of cellaring before assembling the final blend served to fully develop the individual components and allow a few months for the cuvee to marry prior to bottling.

The color is a luminous, lightly golden straw derived both from the grapes themselves and the toffee toast of the oak in which the wine was fermented. Aromas of nuanced oak, baked sourdough pie crust, toasted bread, caramel, and peeled Granny Smith apples emerge from the glass and lead to a palate that enters full-bodied and toasty with notes of roasted almond and lemongrass tea. Luscious honeycomb and sweet butter creaminess deliver a satin-like palate presence that is moderated by a fresh mineral acidity on the finish.

Our 2018 Chardonnay is sourced from diverse premium cool climate appellations throughout Northern California.
